Insurance
We are concerned with safety, the last thing we want is for anyone who eats our food to get sick. Lawsuits are nasty and important points for us to cover are: We want our Co-Op insured. Western requires 21 million dollars of insurance from Sedexo, we want to provide local organic produce. The farmers simply do not have that much insurance coverage to meet the demands of western. The University of Washington's two student run dining facilities have a 2 million dollar insurance plan and evergreen does not require the farmer to have insurance.
